10-Minute Quinoa Salad - Ramadan Recipe

Ramadan Mubarak!

It’s the month of blessings, gatherings, and great food! While we give our digestive system a rest during fasting, we tend to exhaust it once we break our fast because of the various, traditional, mouth-watering dishes on Iftar! Make a change this year and decide to eat clean, healthy Iftar, by changing your side dishes in the holy month! Here’s a 10-minute, easy to make quinoa salad recipe, which you will be sharing with everyone on Iftar!

What you need

The salad:

1 cup of white quinoa
2 cucumbers
1 cup of sun-dried tomatoes. If you are not a fan, grab 1 large tomato
2 cups of raw baby spinach, or 2 cups of iceberg lettuce. It’s your call!
½  cup of fresh mint leaves
½  cup of fresh, chopped into halfs strawberries
¼  cup of raw walnuts

The dressing sauce:

2 tbs. of olive oil
2 tbs. of balsamic vinegar
1 large lemon
1 tsp. honey
1 tsp. ginger powder
Salt and black pepper based on preference

Get Started!

  1. Make sure you have brought the white quinoa to a boil for 15 minutes before we get started!
  2. In a bowl or a jar, prepare the dressing by adding the pre-mentioned ingredients. Try to mix the dressing as much as you can to dissolve the honey, then rest in the fridge.
  3. Chop all the salad ingredients in a bowl, add the delicious dressing sauce you just made and mix well.
  4. Serve, share and enjoy!
